Verbena Catering emerged from a love of food and of each other. As a husband and wife team we have been working side by side since 2006. With over 20 years of combined experience working for premiere catering companies, we have had many years to develop a vision of our own business. This vision has become a reality and Verbena Catering was established. Our mission is to create an experience for our clients unparalleled in quality, service and presentation.




Rich graduated from The Culinary Institute of America in Hyde Park in 1997. Born and raised in Westchester County he started out his career working at high volume hotels and restaurants in NYC and in Westchester. He also did catering for commercial shoots in NYC feeding many high profile celebrities. He moved into the area in 2005 and took over as Executive Chef at Jordan Caterers in 2007. Since then he has been the Executive Chef of three successful catering companies in CT. Rich has also consulted businesses looking to streamline multiple chains to ensure consistent, quality products. Every one who knows him well refers to him as the ‘MacGyver’ of catering, able to overcome any obstacle in the field and ensure a successful event. “Opening my own business is the ultimate accomplishment after many years of hard work in this field. I am also so lucky to have more time with my family.”

Gianna Coletti

Gianna graduated from Boston University in 1999 with a degree in Music. While she was working as a recording engineer at a local studio she also did front of the house service for a few local restaurants and bars. The years she spent in the restaurant industry cultivated a desire to take her passion for food and service to the next level. She attended The Center for Culinary Arts and graduated in 2005. After spending nearly 5 years as the Sous Chef at Jordan Caterers she was given the opportunity to open an eatery from the ground up in Middletown. Acting as Executive Chef was a rewarding experience and maintained her position until the birth of her first child in 2011.

She returned to off premise catering part time so she could stay home and raise her daughter. Nearly 3 years later she had her second child. Fortunate enough to be able to be home most days with her girls, she is excited to have the opportunity to operate her own business and share her passion of food with her clients.
